Fajitas trace their roots to the vaqueros (cowboys) of South Texas and Northern Mexico in the 1930s and 1940s. These ranch workers were often paid in cuts of beef, including skirt steak, a less tender part of the cow. By marinating the meat and cooking it over an open flame, they transformed the tough cut into a delicious, tender dish served with tortillas.
